Paleo Functional Fudge Brownies

Close your eyes and picture this: a warm, ooey gooey tray of brownies emerge from the oven. A rich chocolatey scent fills the air. Crispy edges and a soft center. Is there anything better?

Our brilliant baking friend and Holistic Health Coach Sloane Elizabeth was onto something when she developed these grain-free Paleo Fudge Brownies featuring our dark chocolate. Packed with goodness, they’re the perfect dessert or midday treat. Not only are they nutrient-packed, decadent and delicious, the added Calm Cacao Superblend also packs in adaptogenic ingredients that help power us through the day and sleep deeper at night. Now that's a treat.

Ingredients

  • ½ cup (96 g) melted coconut oil
  • ⅓ cup coconut sugar
  • 3 eggs
  • 1 cup Dutch cocoa powder 
  • 3 tbsp JOYÀ Calm Cacao Superblend
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ tsp vanilla
  • ⅓ cup of chopped JOYÀ Functional Chocolate (or any variety will do)
  • ¼ cup crushed or coarsely chopped pecans

Instructions

  1. Preheat oven to 350F. Lightly brush a 8" x 4" baking dish with oil, line with parchment paper in both directions and set aside.

  2. Melt the coconut oil and put into a large mixing bowl.

  3. Add the coconut sugar, eggs, and vanilla and blend with a mixer or hand blender until light and fluffy.

  4. Add dry ingredients to the wet mixture and stir just until combined and no dry spots remain..

  5. Add in chocolate chips & pecans.

  6. Pour the batter into a prepared baking dish and bake at 350 for ~25 min, until middle is set and a toothpick inserted into the center comes out clean.

  7. Cool in the pan on a cooling rack, cut, enjoy!
